Fish n Chips and Onion RIng Batter

It’s pretty hard to find any thing better than Halibut, especially when it’s fresh.  Jeff was able to go to Alaska with two of his best friends, Mark and John.  They went salmon and Halibut fishing and were able to bring back quite a bit.  My Mother always used this batter when she was breading shrimp, which we would  have every Christmas Eve.  The batter really makes a difference when you are breading something.  This is great for fish n chips and deep fried shrimp, and makes the best onion rings.  I also use this batter recipe when my family wants deep fried mushrooms.  They are the best.

This is one of the best batters for fish and chips and for onion rings. The baking powder makes it light and airy.
  • Ingredients for batter:
  • 1 cup flour
  • 1 t. baking powder
  • 1/4 t. salt
  • 1 egg
  • 1 cup milk
  • 1 T. oil
  • fish of choice or whatever your breading and deep frying.
  1. Instructions:
  2. Add all ingredients and whisk until smooth.
  3. To Deep Fry:
  4. Dip the fish in the batter, place in deep fryer or tall pot with oil that has been heated to 350*.
  5. Cook for about 4-5 minutes.
  6. don’t cook too many at once leaving plenty of room so that the fish is not touching.
  7. Gently stir to keep from sticking to the bottom of the pan.
  8. Drain on a cookie sheet lined with paper towels, to remove any excess oil.

My new prep sink

My Prep SinkOne of my favorite things, is my new prep sink in our new home in St. George!  I have never gotten to build a home from the ground up, so this was really exciting and fun for me.  When we finally found our dream home in the perfect location, they were just putting in the kitchen cabinets.  The builder said that he could change the kitchen at this point.  So that was all  I needed to hear. I started by adding more space to my work area, on both sides.  I had always thought about what my perfect kitchen would look like!  Now I had a chance to put all my ideas and dreams to work.  I always thought an extra prep sink, would really come in handy, and it has!!!  Now I can rinse and prep veggies, while I have pans in my large sink.  It’s also great if you have more than one cook in the kitchen!  I love, love, love my little prep sink!
