Chicken and Crab Roll ups

  • ½ onion, finely chopped
  • ½ pound mushrooms, chopped
  • 4T. butter
  • 3 T. flour
  • ½ t. salt
  • 1 cup chicken broth or stock
  • ½ cup milk
  • 4 boneless skinless chicken breasts, washed and dried
  • ½ cup panko crumbs
  • 6 oz. crabmeat flaked, (I used Mrs. Fridays imitation )
  • 1 cup baby spinach, chopped
  • 1 cup Mozzarella, shredded
  1. In a large skillet, saute the onion and mushroom in the butter until tender. Stir in the flour and salt and cook and stir another couple of minutes making sure there are no lumps. Gradually add the broth and milk. Bring to a boil, cook and stir for another couple of minutes or until thickened. Remove from the hear.
  2. Flatten the chicken to ¼" thickness. sprinkle with salt and pepper. In a large bowl combine the panko crumbs, crab and spinach and stir in ½ cup of the sauce. Spoon ¼ cup of the crab mixture down the center of each chicken breast. Roll up and secure with a toothpick. Place seam down in a greased 9x13 pan. Pour remaining sauce over the top of the chicken. Cover and bake at 375* for 35-45 minutes . Remove and top with the shredded cheese and return to the oven for another 4-5 minutes or until the cheese has melted.
