White Chocolate Raspberry Mousse

  • For the Sauce:
  • 2 cups raspberries
  • ½ cup sugar
  • 1T. fresh lemon juice
  • Mousse:
  • 4 oz. white chocolate ,chopped
  • 2 cups heavy cream
  • 3 T. powdered sugar
  • 1 t, white vanilla
  • 2 cups raspberries
  • shave white chocolate for topping
  1. For the sauce:
  2. Combine the raspberries, sugar and lemon juice in a small saucepan, and bring to a simmer, mash the raspberries with a spoon. Press the through a fine mesh sieve into a bowl using the back of a spoon. refrigerate until cold.
  3. For the Mousse:
  4. Put the chopped white chocolate and ¼ cup of the cream in a microwave save bowl, and microwave in 30 second intervals, stirring until chocolate is melted and smooth and creamy. Beat the remaining cream in a large bowl with an electric mixer until foamy. add the powered sugar and vanilla and beat until soft peaks Fold the whipping cream into the white chocolate mixture. Divide the mousse among 6 small glasses. top the mousse with the raspberry sauce and raspberries and garnish with the shaved white chocolate. Refrigerate until cold for at least 30 minutes.
